who doesn't love carrot cake?
it's pretty easy to make a healthier version of this favourite, but we've gone one better and made it good for you!
makes 6 large muffins
ingredients:
- 2 x carrots, grated
- 1 x golden belly blends sachet
- 1 teaspoon cinnamon
- 1 & ½ cups almond meal
- ½ cup buckwheat flour
- 1 teaspoon allspice
- ½ cup rice malt
- 1 teaspoon vanilla essence
- 3 eggs
method:
- preheat the oven to 190 degrees and prepare a muffin tray. either use cafe style muffin liners or grease your tray. we like to use silicone ones so they pop out easily.
- place all muffin ingredients into a food processor and pulse until combined. spoon out your mixture evenly into the trays.
- place the tray in the oven and cook for 15 minutes until golden brown.
- top with coconut yoghurt, walnuts and a drizzle of honey to serve.
