who doesn't love carrot cake?

it's pretty easy to make a healthier version of this favourite, but we've gone one better and made it good for you! 

 

makes 6 large muffins

ingredients:

  • 2 x carrots, grated 
  • 1 x golden belly blends sachet
  • 1 teaspoon cinnamon
  • 1 & ½ cups almond meal
  • ½ cup buckwheat flour
  • 1 teaspoon allspice
  • ½ cup rice malt
  • 1 teaspoon vanilla essence 
  • 3 eggs

method:

  1. preheat the oven to 190 degrees and prepare a muffin tray. either use cafe style muffin liners or grease your tray. we like to use silicone ones so they pop out easily.
  2. place all muffin ingredients into a food processor and pulse until combined. spoon out your mixture evenly into the trays.
  3. place the tray in the oven and cook for 15 minutes until golden brown. 
  4. top with coconut yoghurt, walnuts and a drizzle of honey to serve.
